Sassy Meatloaf

This is a weight watchers recipe that I got from Gran. She says that it's wonderful. So I'm going to be trying it soon....

Sassy Meatloaf

1lb Lean Ground Beef
1 1/4 cup low-sodium salsa
3/4 cup quick cooking oatmeal
1 carrot shredded
2 plumb tomatoes, diced
1/2 cup coarsely chopped mushrooms

Preheat oven to 350. Spray loaf pan with Pam. In large bowl combin and shape into loaf. Place loaf into pan. Bake until brown and knife in center comes out clean and hot ~1hr 5min. Let stand 10 minutes before slicing.

BBQ Pork

We used this one at Youth Conference. It served over 100 people and it was SO easy. We just used a few of those roaster ovens with a few roasts in each one.

1 cup water
1 diced onion
1 pork roast
Place in a slow cooker and let simmer on high for 12 hours. Drain liquid, saving 1 cup. Shred Pork and then return into the slow cooker.
Add:
1 bottle of BBQ Sauce
1 cup reserved liquid
Simmer for an additional 2 hours in slow cooker. Serve on bun or as desired.

Cold Cereal


I can't claim this one as my own-I got it from my brother-in-law Kevin. It's a great breakfast food.

Cold Cereal:

1 box of Cereal
Milk

Directions:

Pour cereal into bowl. Pour in milk. Not too much, or else it's hard to eat without spilling. Enjoy.
